At what point would you use the negative, or positive, aspects of the hiring process to assess an opportunity? Keeping an open mind is useful so far as it doesn't blind us to warning signs.
Hmm this brings up various feelings, and arguments, in me 😊
Based on my experience as a recruiter and as a candidate, I feel that a) candidates (and interviewers, to an extent) are often primed to view the interview as a sample of company culture so anyone treating as such has a good excuse b) candidates rarely have much else to go on c) we can’t judge a company by a bad apple or a good apple having a bad day, yet we are free to judge a candidate by whatever they manage to display on that day (trauma survivors for example are at a particular disadvantage because of it).
It’s complicated. We have huge expectations from the interview on both sides, and the interview struggles to deliver, I think 😊

I would never use a company’s hiring process as a sole assessment of the company’s culture, or what to expect as an employee.
Let’s face it, we all know many times HR does their own thing.
Look at, research, the company holistically, not just through your hiring experience.
